Class three of a four part series presented by Rob Malone, owner of The Turntable restaurant. Our September Cooking Class will focus on Seasoning & Sauces, & Flavor Builder.

Focus: Stocks, seasoning principles, and pan sauces.

  • Recap + Intro: Review methods and discuss flavor layering.
  • Demo: Making a basic pan sauce (e.g., lemon butter or wine reduction).
  • Practice:
    • Taste and adjust seasoning (salt, acid, spice)
    • Make a small pan sauce using sautéed shallots or garlic
  • Wrap-up: How to use sauce bases at home, herb storage tip.

Take-Home Exercise: Try making a simple pan sauce (e.g., mushroom, butter, wine). Note what works and what doesn’t.
